Fairly Healthy Chicken Parm

Found this recipe online & it turned out REALLY well. I wasn't sure about the mustard with the eggs but it gave it a nice flavor.

Ingredients

  • 5 slices whole-wheat bread made into crumbs on a plate
    • You basically take the slices in your hand & rub it against a grater, keep balling it up as you go and get as much as you can
  • 4-6 thin sliced chicken breast cutlets
  • I used the fit and trim cutlets, they're a bit thick but they turned out well
  • 3 egg whites
    • Crack an egg in half & pass the yolk between the two halves until all of the white falls into the bowl
  • 1 tablespoon of spicy brown or grey pupon mustard
  • 8oz shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup shredded Romano
  • Italian seasoning blend or other herbs/spices you desire.
  • Pam spray

1. Preheat oven to 350F

2. Gently wash the chicken breasts under warm water, blot on paper towels and set aside.

3. Mix the three cheeses and set them aside

4. Grate the bread into bread crumbs on a plate. Combine with herbs & spices.

5. In a medium bowl mix the egg whites & mustard.

6. Dredge the chicken in the egg mixture & place both sides on top of the bread crumbs while pressing lightly. Place chicken on top of a jellyroll pan.

7. Spray tops of chicken with cooking spray, like PAM.

8. Bake for 30-45 minutes depending on the thickness of your chicken.

9. Remove chicken from oven & sprinkle the cheese mixture on top.

10. Place chicken back in oven on top rack & turn on the broiler. Remove when cheese begins to bubble & slightly brown.
