Doom 3 On Mac OS X
From DuncanWiki
While Doom 3 is an incredible game, I had issues setting it up on my 24" iMac & MacBook running Mac OS X 10.5.5 in full 1920x1200 resolution. After a week of waiting for Aspyr to get back to me I found the solution in a forum posting, you need to bring up the advanced preferences window prior to running the game.

Issues I've Had
Both my MacBook & iMac had issues playing Doom 3 out of the gate. I needed to both download the latest patch from aspyr.com, I couldn't play in full resolution & audio out wouldn't work.
Both the auidio & video issues were fixed by running advanced preferences & selecting the proper values.
The patch can be found on Aspyr's website :
Advanced Preferences
If you're loading Doom 3 from the Finder then hold down ⌘ when you double-click it. If you're launching from the Dock then click the Doom 3 icon & immediately afterwards hold down ⌘.
Impressions
iMac
I'd say that after setting 1920x1200 in fullscreen mode I've only seen about 3 or 4 hiccups while playing, typically because either external firewire drive was spinning up for Time Machine or a VMware Fusion virtual machine needed the hard drive.
I'm not using the standard iMac aluminum keyboard, so I can't really speak to how well it works with a first person shooter, nor am I using the mighty mouse that Apple ships. Instead I'm using a Kensington SlimType Keyboard & a Logitech TrackMan Wheel. A friend has purchased the slim aluminum Apple keyboard & found that the keys weren't as responsive and resilient as the SlimType I loaned him.
MacBook
Roaming around on the first area in full screen 1280x800 with the medium preset I noticed very few issues. I've yet to get into a firefight or actually have anything intense going on.
