Ahhh, apple crisp! This is definitely one of my favorite deserts of all time and it's wicked easy to make.

My Thoughts

I try to use 1 Granny Smith apple for every 2 McIntosh apples.

Some recipes call for twice as much white sugar & a bit more brown sugar than I used. I find this detracts from the actual enjoyment of the apples and makes it more of a sugary desert, besides apples already have a ton of sugar in them as it is. You can probably do this with even less white sugar than I list, but you wouldn't want to use any less brown sugar.

I leave the skin on my apples, that's where tons of flavor & Real Good Stuff lives. Compare with & without the skin.

I use pancake & waffle mix with this since it not only helps thicken the topping & is pretty good for you but it also simplifies your ingredients list!

Utensils

  • 9x13 baking pan, I like Pyrex for this
  • Rubber spatula
  • Small saucepan
  • Medium mixing bowl
  • Measuring cup
  • Measuring spoons

Ingredients

  • Enough apples to cover the tray, don't be shy about burying them 2 deep
White Sugar 1/4 cup
Ground Cinnamon 2 Tsp
Bob's Red Mill Pancake & Waffle Mix 2 Tsp
Bob's Red Mill Pancake & Waffle Mix 2/3 Cup
Light Brown Sugar 1/2 Cup, Semi-Packed
Light Butter 1/3 Cup

You can find the pancake & waffle mix on amazon.com and probably your local grocery store. I find it mixes very well with the brown sugar & butter. It also makes some seriously kick-ass pancakes & waffles.

If you don't want to use it or can't get your hands on a bag you can use the following instead :

Flour 2 Tsp
Flour 2/3 Cup
Baking Powder 1/8 Tsp
Baking Soda 1/8 Tsp

Putting It All Together

  • Wash your grubby hands!
  • Set the oven to 375F/175C
  • Place the butter in the saucepan on low heat
  • Core & slice the apples into 8 pieces, placing them in the pan
  • Mix the first three ingredients (white sugar, ground cinamon & pancake mix) in the bowl with your fingers & then sprinkle on the apples
  • Mix the next three ingredients (pancake mix, butter, brown sugar) in the bowl
  • Pour all of the melted butter into the bowl & mix in with the rubber spatula
  • Use the spatula & your fingers to cover the apples with gobs of the mixture
  • Place the pan in the oven & bake for 1 hour.

Enjoyment

Let it cool, but you definitely want it warm when you serve it. Serve it with french vanilla ice cream or just by itself.
